Hey guys! I am super honored to share my first foodie post with you, for as long as I can remember I have always envied my friends Cindy’s cooking, she always makes everything look so easy, the fact that my husband never hesitates to accept a dinner invite is more than enough proof that she definitely knows her way around the kitchen.

So a big thank you to Cindy for helping me in my time of need 🙂

This recipe is really simple and fun to prepare. The amount of items you want to use is up to you. I always keep the filling to the minimum as this will make rolling the chicken fillets easier.

 Chicken and Bacon Fillet (2)Ingredients I used:

4 Chicken fillets, sliced down the middle, but don’t cut them through. They need to just flake open.

Plain Feta cheese.

Peppadews ( mild)

Cheese. It doesn’t matter what kind of cheese.


Shoulder Bacon – 2 packs


Place the filling in the fillet. I don’t like to place it in the middle as this will make the rolling process more difficult.

After filling, roll it nice and tight. Take 2 pieces of bacon and roll them around the the rolled up chicken.

Secure the whole thing with toothpicks.

Place them in a dish, and drizzle with olive oil. this will also help the chicken in not being dry.

I also drizzle olive oil half way through the baking process as well.

Place in oven. 180 degrees for around 60min. This also depends on your oven. Mine takes a while to heat up, so I put it on high.

You can serve on rice or with a nice fresh salad and strawberries on the side.
